Like a great many of our customers, we love our food. Our menu reflects this with a wide range of tastes and flavours from around the world, and where possible we source local ingredients from independent suppliers.
One such local business is Basil’s Fungi Farm. Basil’s is owned and run by Robbie, with help from his girlfriend Daisy, and located near Hastings, East Sussex.
Robbie told us: “I had been commercially growing mushrooms out of my house since April 2023, and in July I moved into a small unit at the yard on Waterworks Road where I’ve built a mushroom farm from the ground up featuring a large fruiting room, an incubation area and my latest addition, a small lab for performing sterile culture work which allows me to work with a variety of unique and rare mushroom cultures.“
The Chefs here at the Halt have been inspired to create some sumptuous recipe ideas from the mushrooms that Basil’s Fungi Farm are producing, including the amazing Chanterelle Mushroom Katsu Curry – this dish was popular with both vegetarians and non-veggies as the flavours were deep, rich and intense, with the wonderfully fresh mushrooms adding to the overall quality of the meal.
We wish Robbie and Daisy continued success in their venture and will continue to find new and exciting ideas to add to our menu using the fungi they are producing.
